Why I Love This Recipe

I got this recipe out of a cookbook for early californian and mexican recipes. Very easy and very good, my husband loved it and he doesn't care for rice.


Ingredients You'll Need

1 c Rice
1 Medium Onion, Chopped
2 Tbsp Lard, or Olive Oil
1 Clove Garlic, Minced
1/2 Small Can Tomato Sauce
Salt and Pepper to Taste


Directions

Wash rice in 2-3 c water, drain. Use iron skillet (i used a thick pot and it worked nicely) and fry rice in lard or oil, stir until the grains separate easily and are slightly brown. Add the garlic, onion, salt and pepper, stir and fry for a few minutes longer. Add the tomato sauce and boiling water, enough to cover rice by about 1 in, stir well. Cover and simmer on low heat for about 20 min. or until dry and well. While cooking do not remove lid or stir.
