2020 has been a year for everyone to really think about life and family while going through the worst pandemic in 100 years. Most people have been forced to stay at home during these times and wondering what else could they cook to satisfy those appetites. To help celebrate Hispanic Heritage Month this year, we thought it would a great idea to share our Hispanic/Latin inspired dishes with everyone.

If I have to whip up a meal for my family or myself – dinner, lunch or breakfast – I make quesadillas (or flip the ingredient order and they are tacos); all Duda family members, and guests, like them. They include all food groups, and I can use most any leftover from our kitchen. This was my “go-to meal” when I was single…when I learned that my future husband’s was burritos, I knew we were meant for each other. (I used to live in Mexico, and he spent significant time in Latin America while he was growing up). Liz D.
