Ingredients You'll Need
2 tablespoons vegetable oil
1 medium onion, coarsely chopped
1 red bell pepper, cut into medium chunks
2 garlic cloves, minced
3 medium zucchini, sliced into rounds
1 box frozen kernel corn, thawed and drained
1 large tomato, peeled and chopped
2 jalapeno peppers, seeded and minced
½ teaspoon basil
½ teaspoon each of salt and pepper
½ teaspoon Italian seasoning
⅓ cup grated parmesan cheese
Directions
Heat the oil in a large skillet over medium-high heat. Add onion, bell pepper, and garlic; cook for 5
minutes. Add zucchini and cook for 7 minutes. Add remaining ingredients, except parmesan cheese,
cover, reduce heat to low, and cook for 7 minutes, stirring often. Sprinkle with cheese and serve
immediately.
