Ingredients You'll Need
Olive oil
3 garlic cloves, chopped
2 small zucchini, sliced lengthwise into ½-inch pieces
1 package frozen Italian beans, thawed and drained well
1 small red onion, sliced thin
10 cherry tomatoes, halved with juice squeezed out
1 tablespoon ketchup
¼ cup beef stock
Black pepper
⅛ cup Tawny Port wine
Directions
Heat a little olive oil in a large skillet over medium-high heat. Add garlic, zucchini, and Italian beans;
cook for 5 minutes, stirring often. Add red onion and cook 1 to 2 minutes. Add squeezed tomatoes,
ketchup, beef stock, lots of pepper, and wine; cook 2 to 3 minutes.
