Hot Potato Salad

Ingredients You'll Need
6 slices bacon
2 tbsp. flour
2/3 cup cider vinegar
1-1/3 cups water
1/2 onion, chopped
1 tsp. salt
dash pepper
1 tbsp. sugar
2 tsp. pimiento, finely chopped
6 cups cooked potatoes, sliced
Directions
Fry bacon until crisp. Drain on paper towels, then crumble.
Combine 3 tablespoons of bacon drippings with flour. Stir in vinegar, water and onion. Cook, covered, until mixture boils and thickens slightly. Simmer for 10 minutes. Stir in salt, pepper, sugar and pimiento.
Layer potatoes, bacon and sauce in a 12-inch skillet. Allow to stand for several hours. Heat just before serving. Serves 8.
