Tuna Salad for a Sandwich

Ingredients You'll Need
1/3 cup olive oil
3 tbsp. wine vinegar
1/4 tsp. pepper
1/2 tsp. salt
1/2 tsp. dried basil leaves
1 garlic clove, peeled and minced
1/4 lb. fresh green beans
8 cherry tomatoes, quartered
1/3 cup finely chopped red onion
10 olives, pitted and sliced
2 cans (7 oz. each) tuna, drained and flaked
6 sandwich rolls, sliced, Kaiser or your choice
3 eggs, hard cooked, peeled and sliced
2 tbsp. fresh parsley, chopped
Directions
Break green beans in pieces then steam until crisply tender. Whisk oil with vinegar, pepper, salt, basil and garlic. Add beans, tomatoes, onion, olives and tuna. Toss lightly. Cover and refrigerate for at least 30 minutes.
Place about 1/3 cup of tuna salad mixture on bottom half of sandwich roll, top with egg slices and sprinkle with parsley. Place top half of roll on top and press down lightly. Serves 6.
