Chicken Enchilada Bake

Family favorite, and easy to prepare with a cooked rotisserie chicken from the deli!


Ingredients You'll Need

4-1/2 cups shredded rotisserie chicken
1 can (28 ounces) green enchilada sauce
1-1/4 cups sour cream
9 corn tortillas (6 inches), or other tortillas of choice, cut into 1-1/2-inch pieces
4 cups shredded Monterey Jack cheese (Mexican blend works well too)

Other Topping Options:
Fresh minced parsley
avocado
green chilies
extra cheese/sour cream


Directions

Preheat oven to 375°.


In a 13x9-in. baking dish, add layer enchilada sauce or grease/butter pan to avoid sticking.

Add half of each of: chicken, enchilada sauce, sour cream, tortillas and cheese. Repeat layers.


Cover and bake for 40 minutes; uncover and bake a few more minutes until bubbly.

Cool for 15 minutes then serve. Top as desired.
