Why I Love This Recipe

I've been making this for years and it's one of the few ways my husband will eat potatoes.


Ingredients You'll Need

2 lbs potatoes (about 6)
2 tablespoons shortening or vegetable oil
1 large onion, thinly sliced
Salt and Pepper to taste
2 tablespoons butter


Directions

Scrub the potatoes and bake as if you were making baked potatoes, until almost done. (this is not a major issue, the firmer the potato is, the less they'll crumble when cooking again). i usually bake my potatoes in a 375' oven for about an 45 mins to an hour. Let cool until easy to handle without burning yourself. Cut potatoes into thin slices.


Heat shortening in large skillet until melted. Layer 1/3 each of the potato and onion slices in skillet; sprinkle with salt and pepper. Repeat 2 times. Dot top layer with margarine.


Cook over medium heat until potatoes are brown, turning once.
